1 1/2 cups TVP (texturized vegetable protein)
1 can black beans
1 can kidney beans
4 cans diced tomatoes with green chilies
5 cans diced tomatoes low salt
2 packets chili seasoning
2 yellow squash, cut into thick slices and then halved
1 white onion, chopped
2 bundles asparagus, cut into 2-inch pieces
1 bundle green onion, chopped
Rehydrate the TVP as per package instructions.
Saute onions in oil.
Brown the rehydrated TVP in a skillet like ground beef.
Add yellow squash to saute.
Combine all ingredients into pot and simmer for one hour stirring as needed.
